Manage to cook Nasi lemak with squid sambal and grilled chicken last weekend.
The reason behind because of Myza, she requested nasi lemak when she saw nasi lemak's photo in one of my cookbook.
Then came to the interesting part, when she saw nasi lemak was served on the table. She came to kiss me and said, ' i luv mama' and 'mama, i want to eat by myself' so SWEET!! and managed to finish 2 bowls of nasi lemak for breakfast last Sunday.
ok Myza,here is mama's secret recipe of Nasi Lemak. Maybe u can try it when u become a pretty girl soon.
The Rice
Rice 4 cups
Coconut milk 2 cups
water 2 and 1/2 cups
a slice of ginger
a slice of garlic
1 tsp salt to taste
abit of fenugreek
pandan leaves- knotted
- Wash and drain the rice
- Mix coconut milk with water+ ginger+garlic+salt + fenugreek and pandan leaves. add to the rice.
- Cook using normal rice cooker.
Squid Sambal
1 no brown squid ( cut into small pieces and ozone wash first)
3 shallot + 4 garlics + 1 small pc ginger + 12 dried chilli + 1 big onion + 1 slice belacan ---> well blended
1 tsp tamarind paste
1 tablespoons of brown sugar/gula melaka
Salt to taste
- Heat oil,put the blended ingredients,until separated from oil,
- add brown sugar+salt and tamarind paste.
- Put squid with a cup of water
- Simmer in low heat until squid is soft and the paste thicken.
Simple Grilled Chicken
Chicken parts.-3 wings 3 drumstick
Curry powder
turmeric + lemongrass + ginger ---> well blended
salt and sugar to taste
- Marinated chicken with all the ingredients
- Pre - heat oven
- Grill until chicken is cooked through, 15-20 minutes at 250oC
Serve rice together with hard boiled eggs, cucumber and fried anchovies.Yummeh!
